As president of Boyd Coffee Co. Phils., Robert Francisco has developed numerous blends for the country's top restaurants and coffee shops. He has released his own blend, San Francisco Coffee, and his book, A Coffee Journal, is the first coffee-table book that provides informative, authoritative coverage of the life of coffee in the Philippines.
What do you pair your coffee with?
I take coffee as it is. But there are breads that go really well [with it], like Pan De Rustic or cheesecake from Rodillas Bakeshop in Quezon.
What is your maximum number of cups of coffee?
Twelve espressos! But there are days that I really don't drink much but "taste" more than 12 to sample coffee from our production line or entertain guests.

Where have you gone on your coffee travels?
Countries that have influence and history in coffee like the Philippines, Indonesia, Malaysia, Thailand, Uganda, Italy, USA, Germany, Japan, Hong Kong, Singapore. I wish to travel to Central or South America, Yemen, Kenya and Ethiopia.
What Coffee equipment will we find in your kitchen?
A coffee press, a stove top espresso brewer, a bean-to-cup espresso machine, a drip brewer and, my most frequently used a percolator. You can't imagine how good a cup of coffee could be brewed from a percolator unless you know the secret of brewing.
